Birdland is a Michelin-starred yakitori restaurant hidden beneath the Ginza railway tracks, where Chef Toshihiro Wada elevates grilled chicken skewers to haute cuisine. Using premium Okukuji shamo (fighting cock) chickens, each part of the bird—from breast to heart to cartilage—is grilled over binchotan charcoal with extraordinary precision. The result is yakitori of unmatched depth and sophistication.
